Jollof rice is a West African dish, but I don't know if the rest is West African.

Indeed, jollof is west African, but the dish I assembled here is just something I put together, nothing specific.
Do you just fry the banana as-is? I'm thinking it would be so good with some Lawry's jerk seasoning
Yes, as is, but it was green, unripened. It's not sweet, and really tart. Deep fried and salted, it's really good. I don't know the seasoning you mentioned...
Here's a copycat recipe, with the caveat that Lawry's uses sweet bell peppers instead of hot peppers
