Because AI is a solution in search of a problem. The current plan is to just put it in everything and hope one of them is better as a result. She plays the sweet mother/grandmother role so well she is my favorite choice. Think Dewey Cox's mother.
I've seen her in The Leftovers and I've heard great things about her in Justified, so it think taking on a more villainous role is well within her skill set.
I think she would also be the best in terms of character reveal.
Glenn Close.
I think she has the right look and she was in Guardians of the Galaxy, so clearly not against being in comic book films.
I don't think she's played a villain in a while, but as Cruella from years ago, she can do it.

Emphasis mine. So basically he's just saying don't apply to every role, pick the roles that you know you're the best at, the roles where you can really "Wow" the casting/director.
I think that's fair, but I imagine that's difficult when you have no job and are looking for a job. Especially so if it's your first few jobs and you don't have much of an acting reel yet.
