They tast like spinach! It's a shame so many people throw them away.
They're super tasty when they're tiny. Baby beet greens are so good.
beet greens taste like beets but in leafy form. I intentionally grew beets last season for the leaves, when the leaves got big enough I would cut them to eat in my salad. Doing this the tuber stays small. OP's pic is definitely not beet greens.
