I've never had Instagram😂 so kindly explain why I can't just see everything like lemmy? Logically we all can see each other's content here so that should be the case there as well no?
That is the case, but in the pixelfed app, you essentially get 3 timelines, federated which shows everyone across all instances, local which shows people on your instance and following which shows the people you're following.
