I've never been much of a cook, but it's something I'd love to try and get better at. I've got a growing family and as much as freezer food is serving them now, when they're older I'd like to be able to cook them something genuinely nice.

I will start by saying that all of my recipes are heavily Americanized/bastardized to be easy to fix and fit my taste.

Carbonara - I use J. Kenji Lopez-Alt's method as it's both easy to make, quick, and scalable. I just sub in thick-cut bacon instead of guanciale. One of my nieces calls it the eggs and bacon pasta.

Tacos/Taco Salad - Fry up hamburger (~1 lb) with paprika(lightly dusted), onions(1/4 onion diced), and cumin(~1/8-1/4 tsp per taste). Chop up some tomatoes and lettuce. Warm up a medium or large tortilla on each side in a pan with a little oil let rest on paper towels until ready to serve. Serve with grated cheese, sour cream, and salsa. Fill as you like.

Hamburger Mac - Fry up hamburger with paprika and half a can of rotel tomatoes. Cook preferred pasta as directed (I like shells or rotini they're good for catching the sauce). Make sauce from Big Daddy Mac mix as directed. Mix together and serve.

Biscuits and Gravy - This recipe is better than I can explain quickly but the dish is supper easy and fast to make. It also scales very well.
