Wow, that site is really good! However it seems the ISO-IT layout is not in the available options :/
You should be able to get iso and then buy Italian caps separate.
I thought about it, but the keys are different, aren't they?

Ok had to dig in a bit but im 90% the ISO layout is the same mechanically its just a matter of installing Italian key caps and setting your operating system to the correct keyboard inputs.
So you can use that database to search for any ISO keyboard that meets your requirements and then you can just buy a set of keycaps with the correct Italian legends.
A bit late to the party (wasn't in the mood to do shopping for a while), buuuut thank you SO much for pointing that out! You're 100% right, I don't think I would have noticed if it weren't for your comment, I was also a bit stupid because I just hadn't read, in the same website I cited myself, that the other layouts are listed and explained.
I think I'll do exactly what you suggested!

Sorry I can’t help, but I’d be curious as well. My old kb broke so I’ve been using a crappy Logitech membrane for a few months while I pick out a new one and I just can’t find a good list of options. Something I can filter would be amazing. Just commenting so I can find my way back. Good luck to you

If worst comes to worst I'll put up with what I found and pick out a 60% one since apparently there's a middle ground between full-size and 60 that just hates my country... I did want to cut out the bloat, but oh gosh that seems a bit much, I'm scared of the learning curve
