I've never understood the point of variable height desks; they always seemed over-engineered to me.
I suggest making a desk that's fixed at standing height and then just getting a stool-height chair to go with it.

Yeah, problem is that I don't know of any chairs that height that are comfortable to sit on for a working day. I know, reduce time sitting etc., but it's not so easy in my current situation and I have to be at the desk for 10h+ most days
Herman Miller and Steelcase make stool versions of their usual office chairs:
I don't know if I'd trust these as much with reclining and putting my feet up, but it's good to know these options are available.
Have you looked into hydraulic lifts, like used with hospital bed tables? Wherever you are in time, I am 4 months behind. please forgive my tardiness, I have a note from my mom.
Gas lift cylinders would be waaay easier than full hydraulics for a DIY project! You can salvage them from old office chairs or buy replacement ones online for like $30. Just need to design a simple frame that lets the cylinder support the desktop. If you want to add some powered accessories later, check out portable power stations on gearscouts.com for clean power without running cables everywhere.
