I was just watching a video about wierd health cases that talked about this thing with nicacin deficiency that you saw in the poor eating corn in the us but not the poor eating corn in mexico because of this.
Yes. It has been apparently making a comeback in US tortillas since they also generally taste much better, but it is hard to scale up to mass production, so those products are generally premium priced in US.
