I'm east of these beaches this week on vacation. Is this related to the high water temperatures in the Gulf? Saw fish have been driven to strange behavior in southern Florida recently.

I'd leave them in the ground if possible and just untangle them from the fence. Cut them back if need be. This is not a great time for transplantation and they may not survive.

If you have to take them out, your plan is probably the best you can do. Make sure to keep the roots wet the entire time they're out. That's going to be your main killer.

Looks like Veronica persica, like the poster above noted, a "speedwell". It's exotic and naturalized but I don't know that it's invasive as it blooms early, stays low, and seems to only inhabit areas of high disturbance. I always enjoy seeings its flowers

Stay away from prepared foods and buy more cheap staples like rice, beans, and potatoes. Shop the meats that are the best price per pound and know the highs and lows of fresh fruits and veggies to get better deals. Beef and fish have been basically unaffordable lately while pork and chicken have been more reasonable.

The prepared foods and snacks are getting ridiculous. A half gallon of cold brew coffee is up to $7. I can make it myself for a fraction of that, but it's more labor for me. A bag of cool ranch doritos was going for $7 a bag... I chose some cheaper chips I don't like as much, but got 2 bags for $4.50. A can of pad-Thai sauce is $12 at my grocery...
