My assumption is that if Chinese EVs manufactured in Mexico prove to be superior to domestic alternatives, it could undermine the narrative of Chinese EVs being better due to factors like cheap labor etc.

They'll simply be superior on price based on Chinese subsidies and consumers by-and-large will choose the cheapest option regardless of quality even if it harms them in the long run. This is why Walmart is the largest retailer in the world and a major reason why so many people are broke in the US. It's a perfect trap.
