It's not impossible to make a chain of coffee houses that serves decent coffee, Espresso House did it in Sweden.
No, society in general just isn't too particular about their sweet milk drinks. You don't need to use the most perfectly extracted espresso in a beverage that's mostly dairy and sugar syrup.
