From has been exploring gender ambiguity at least since Dark Souls. It’s nothing new.

Gywnevere, the big tiddy mommy that gives you the lord vessel, is male. DS2 had a coffin, guarded by trolls hilariously, that lets you swap gender at will. From has always been based.
I think you're confusing Gwynevere with Gwyndolin, a male raised as a female. I don't think there's any indication Gwynevere is male.
Some interpret Gwynevere to be as much a part of the illusion Gwyndolin created, ergo: what the player sees is Gwyndolin as Gwynevere. But this also says the sun also is Gwyndolin, etc.
The actual Gwynevere is long gone/dead at any rate.
Its Gwyndolin that is born male but raised female, because they were good with moon magic, which was seen as feminine.
