You can do this with /api/v3/community/hide, or in the database by setting community.hidden. Unfortunately this is not available from lemmy-ui yet.

No worries, I won't be hiding anything. I'm of the opinion that stuff that breaks the rules is removed and any other content is up to individuals to block.

And I'm not US based, the current political scene there doesn't affect me directly. You're free to discuss abortions in Texas all you want on my instance!
