Im going to want to store a massive amount of videos in a native app that probably requires on-device storage on the main drive so Im thinking that might require just custom maxxing out the SSD
What's the app? There should be settings to change it's working folders.
An external storage is the best solution for excessive amounts of data like this and USB C has pretty good speed to be capable of easy transfers if you have quality cables.
An external drive is also superior for a backup and data security regime of your work, particularly if you are video editing original works or work with sensitive data.
Its actually more of an iOS/iPadOS app that I doubt allows for setting a custom documents directory or whatever where apps can store inputs (M Macs can usually install+run iOS native apps. I severely doubt they accounted for my use case when they published it haah
Ipads and iphones are also capable of mounting external drives and some apps will let you choose them for data storage, so it's possible.
