I want to create new places for things I'm interested in that were on Reddit, but I'm not sure how. Like is each community an instance? If so, does that mean a different account for each thing? Or is there just an obvious step in missing?

Each instance is effectively its own reddit, each community is a subreddit, but people who have accounts on one instance can see and subscribe to communities on other instances so long as those instances stay federated with one another.

To create a new community (through the mobile web interface at least), hit the hamburger in the upper right hand corner of the screen and you should see a "create community" option.

This is all coming from someone who's used lemmy for about a week, so someone please correct me if I screwed up any of that.

Your instance had to allow it. Some you have to ping a moderator and get there attention. Some you can just create

Ohh. So joining a science focused instance, I probably can't create a community for, say, a brand, or politics, or anything like that?

Well, most instances I’ve seen so far have been generic. The most specific one I’ve seen so far was https://startrek.website.

Most instances allow people to create communities. Looks like you are on mander.xyz. I don’t know much about that one but if you don’t see a “create community” button in the sidebar that means they have it set so only moderators can create communities. You’ll have to ask a mod to create one for you, or signup on another instance like Lemmy.world and create your own community.

Basically join an instance and try to create the sub on there. if they don't let you or if there are no admins to help. create an account on another instance and if that one works then your good. people can always find you from another instance and can comment and post on whatever instance you are on. like me I created account here on lemmy.world i was on lemmy.ml at first but i couldn't create the sub. so now i have the sub and anyone can find me.

An instance is a server running Lemmy software, which can have a bunch of communities which are effectively subreddits. Some instances allow users to create communities, others restrict that ability to admins.
