That feels like a responsibility! Plus I'm struggling to understand how to do that if I'm being honest. Still feeling my way around the fediverse!
If you do decide to make them community I'd be happy to join. Or even help moderate it with you. I'm quite comfortable with Lemmy and moderate 5 communities with between my accounts. I also used to be a vegan and would like to get back there.

While I'm not a vegan, were were vegi for a few years until we found that our daughter has IBS - lots of plant based protein really is not the best for her. We have switched to mostly pescetarian and red meat just a few times a week.
Anyway way, I dont know of any vegan community on lemmy - I do hope you find your way.
