I just got to Ginger Island for the first time and can't find more than one golden walnut.

I played maybe 20-30 hours years ago (around when the first game came out) but put it down because I tend to over-optimize farming, and then become annoyed or stressed in a silly way.
I picked it up a couple weeks ago again because the fishing map sounded like fun, so I’ve been concentrating mostly on fishing and it has been quite fun! For some reason it feels a little less easy for me to fall into the optimization trap than planting stuff and making sprinklers.
I haven’t actually done a lot of fishing on other games but I’m really enjoying the variety and slightly different challenge.
Once you have the money and resources to do so (probably not in year 1), consider investing in animals. I'm increasingly convinced that they are a better option in terms of the gold return on your time/work input, which frees you to explore other parts of the game. You can still grow crops in the greenhouse when you need them.
I love having chickens too! I think every playthrough I realize how easy it is to make the mayonnaise machine and the chickens are cute.
I also see that there are fish ponds, and that sounds like a fun animal option too
I'm getting back into it after a hiatus. Went back to a farm in progress rather than start new. One of these days I'll actually finish the game (whatever that means for me, I know you can play a farm for hundreds of in-game years if you want to).
Trying to finish Ginger Island, and for the life of me I cannot find the last golden walnut in the west — even with the help of the Wiki map revealing locations. I think I'm going to have to pay the bird for that one, which is pretty unsatisfying.
