what I recall doing was:
A bunch of diced onion, a bunch of diced red bell pepper, diced butternut squash, yellow squash, and eggplant (I would skip the eggplant it turned a weird color). The recipe called for zucchini but didn't have none. Fried all that, added a bunch of garlic, an equal amount of ginger, then a vegan Thai curry paste we get pre prepared (which is like mostly chili paste with lemongrass, galangal, paprika and some other spices in it), then added chickpeas and some diced tomatoes, then added like a shitload of coconut milk, like most of the liquid was coconut milk, and then I added some veggie stock for flavor/saltiness. I didn't really season it much except salt/pepper/the curry paste/fresh cilantro and basil. And then I had green onion rings to garnish at the end
that's all I recall tho
Nah that fries when the squash and veg are almost done before adding the curry paste, frying that a bit then adding the chickpeas and tomatoes (which adds liquid and stops the frying)
