I’ve found the opposite true, but maybe you prefer darker roasts? You can definitely find coffee like that in the US as well.

Totally, we can always use more technicians! The machines aren’t all that complicated. We’re just heating and moving water around. 🙂

I work in equipment. Fell in love with coffee ages ago, and love to build things. It made for a fun intersection of hobbies.

Before I fell in love with it, it was just a thing that I drank in the mornings that tasted kinda gross and I’d add some sweet shit to in order to wake up. It took a bunch of folks like you to show me things like that Ethiopian coffee could taste like blueberries before I realized that there was a whole world of flavor that I hadn't found. Similar experiences with things like wine or beer.

I’m glad that people like you exist to help invite a new generation of folks into this world!

Glad to see some baristas on here! I don’t work in a cafe, but I work in coffee. Super happy to see people that aren’t pretentious. It really struck me with some of my favorite customers early on. No judgement and willing to help people learn and explore.

Keep up the good work!

I’ll check, but I need your mothers maiden name and the street you grew up on.

Amazing! No notes.

The only thing I can’t abide by is that he uses a food processor for the dough. I still toss everything in the kitchenaid with a dough hook. Maybe someday I’ll give his method a try, but it feels wrong.

I’m going to be the 1 in 12 that upvotes this for the laugh it gave me. Thank you!

Thanks! I use his pizza dough recipe often! Kenji rocks!

Beef and broccoli (midwest.social)

Not my best work, but Kenji Lopez Alt’s beef and broccoli recipe is one of my favorites. My only modification is about 60 grams of gochujang in the sauce.

Give it a go if you have a chance. Fries back up nicely for leftovers if you leave the broccoli slightly underdone.

Edit: autocorrect murdered my last sentence

Awesome! I’d love to try this sometime.

I thought seafood flavor would be better than the “chicken marshmallow” they gave him last time. He’s letting me know how entirely wrong I was in that choice.

To be fair, it smells awful. I’d probably make the same face.

It keeps him off of my keyboard while I play games, so it’s really a present for both of us!

I made a thing!

This kitty stopped to stare and pose, but did not let us pet. 😢

This dude didn’t want us to leave. He kept nibbling at my hand when we’d stop petting him.

His mom ran away when we walked up, but he was pretty chill.

I took this a few years back at an outdoor dinner at this restaurant in the hills in Tuscany. Dude hopped up and sat in front of the wine list. Best dinner guest ever!
