My experience with my Meyer lemon tree (I didn't plant it and am an atrocious caretaker - I'm sorry tree) is that the flavor varies by size. Big ones like what you've got are nice and juicy but less tart. For something like a cocktail or culinary acid (dressings, etc), you'll probably want to pick them when they're smaller. Have fun experimenting!
