It's somewhat obvious that AI is going to be used to replace workers, as much as possible, so what do you think is the best way unions (or worker orgs in general) should deal with it?

Simple, state that they can replace workers with AI all they want, provided that they pay every worker they replace their full wage in perpetuity, indexed to the cpi. After all if Ai is so much more efficient and smart they'll make bank over that increase alone!
