I actually prefer Kenji's Spam and egg version here: https://www.youtube.com/watch?v=IRHfbIDn-YU
I'm Korean myself and I make this version at least monthly. The key to any fried rice is always use day old cold rice. Fresh rice has too much moisture in it and it doesn't fry well.
