It retains humidity a bit and that keeps vegetables fresher longer. It also helps mold grow so eat your veggies while they're fresh.
Keeping your veggies in plastic bags or cups of water (like cilantro in a cup of water) is even better but who am I, the queen? I usually just chuck that stuff in there however it came from the market.
Plastic bag + and paper towls tends to help
Costs more I guess but lasts longer. Depends how quickly you go through vegetables.
That does help! It is also a way to sprout things, so a doubly useful technique.
