I am already trying to cut things out. I am having a salad for dinner.

I don't know much about good vegan nutrition, I know with flexitarian nutrition, B12 for circulation and heart and healthy animal fat for optimal brain/cognitive health can be challenging if you're on the go. Your care provider should be able to address vegan or flexitarian nutrition that's right for you. I think the main thing is sharply curbing added sugars and highly/ultra processed foods as much as possible. Best of luck.
