Wouldn't self hosting SearXNG only work if you have privately acquired a VPS that couldn't be tied back to you? In the end it still sends requests to many search engines and is still tied to your server, wouldn't it be better to use a public instance? Maybe rotate between public instances?
Don't take my word for it as I haven't actually done it myself, but I believe you can run SearXNG behind a proxy or a Tor relay without needing a privately acquired VPS. Rotating public instances would probably be easier and faster though.
