Mine is a mix of the following:

Description of the route they take
Some specialized function
Some title based on their design (GettingRailed and CryoBaby, for example)

I've started using icons instead of words.

The ship exporting from Vulcanus has the Vulcanus planet icon.
The ship bringing Gleba science has the Agricultural science pack icon.
My personal transport ship has the car icon.
The platforms that just sit and make carbon or calcite have their orbit planet icon, then their resource icon.

I have previously used sci-fi ship names, but quickly ran out of ideas.

Voyager	Promethium harvesting
Saratoga	Biter egg transport to Gleba
Red Dwarf	Firing nukes* at asteroids
