Yeah, I read your post but it confused me a little because it seemed to me that you and your wife already have a bachelor's degree or some qualifications. Depending on your degree and it if it is in the Science area, you can have an easier time achieving the residency through this work visa.
But... Anyway, if the study visa is what you are looking for, you can probably make an account on rednote and ask a question there. You will very much find people that already achieved what you are trying.

Seems like China rolled back their K-Visa, to some extent at least. There was a lot of backlash from Chinese students, and there's still nothing on their embassy's website
