I finished my Baldur's Gate 3 run with an all-fighters party. In the end, the Act 1 fight against Flind and the gnolls was the hardest, because I was still level 3 when I did it. The rest of the game was pretty uneventful, as nothing really posed any challenge.
Action Surge and (Improved) Extra Attack are so strong, that most enemies die in the first turn or something, which usually just leaves the boss, who doesn't survive for much longer afterward.
I actually started a new run pretty much immediately after. My previous ones were still pretty normal Honor Mode playthroughs (using UI and "QoL" mods), this time I decided to just use a bunch more mods to change up the game and mess around. I'm running around with an increased party size, up to level 20, custom items, custom and more enemies, stuff like that.
While I want to basically just steamroll through stuff, some of the custom items are definitely too strong. I'll probably stop using some of the stronger ones and look into buffing enemies even more.
