The name literally means rotten cheese, it's intentionally filled with maggots to "ferment it," 'aficionados' specifically think it's unsafe if the maggots are dead so you're supposed to eat them live BUT THEY CAN SURVIVE IN YOUR GI TRACT and make you very sick. The fucking maggots can jump 6 inches!

What the fuck is wrong with people?

I learned about this because I guess I'm supposed to make a vegan "Dublin coddle" tomorrow for work and I was like, what the fuck is a Dublin coddle? and the wikipedia mentioned how it looks gross so Dubliners get defensive about it the same way others do about their weird national delicacies

The thing is though it's just slow simmered sausages and potatoes and shit, it looks gross because it's sad peasant food. This rotten cheese shit is on an entirely different dimension of "fucking gross"

If you've got a good vegan recipe feel free to share it otherwise I was just going to roast some vegan sausages and potatoes and throw those into a stew

We have vegan bratwurst that isn't bad. Plan was I was going to chop them into bites, roast with potatoes until browned, then throw it into a pot with some caramelized onions and vegan chicken stock (maybe not too much so it isn't TOO chickeny), salt, pepper, let it simmer until it thickens up a little and then serve it garnished with parsley. Iirc that was the only real herb/seasoning i saw mentioned but tbh i got distracted by the rotten cheese thing and then was too tired to wanna do work for tomorrow

My plan so far is to do all that and serve it with roasted kale for something green, and like idk maybe roasted carrots, and some rolls. I'd do mashed potatoes but the main line is doing a vegan shepherd's pie (can't wait to see how they fuck it up!) AND i think mashed potatoes as the starch

I like about four or five bites per sausage. Substantial pieces. But I have no idea how vegan brauts compare..
