Yes I love polenta, with garlic, onions and diots (local sausages), or cooked in broth and chees and gratinated with vegetables like brocoli.
That is not the point, the article says native indians used to soak and cook korn in an alcaline solution (like puting ashes in pot while cooking) to preserve vitamins and amino acids. After bringing korn to europe we have lost this habit, so people who ate only polenta (poor people) were having illness due to vitamin deficiencies.
