Have you tried HERE WeGo, previously known as HERE Maps?
The app started live as Nokia Maps (so Finnish) and is now owned by a consortium of German auto makers (for some reason headquartered in the Netherlands).
I don't have an iPhone, but according to the AppStore listing the iOS version should include CarPlay.
I tried both magic earth and Here WeGo both work great and support Apple CarPlay. I myself am using magic earth in my car and on my (i)phone because I find it slightly better. However I still use Here wego on pc to check and plan routes, since magic earth only exists as an app.

I use sygic, it is more work, in ireland i need to look up the post code for everywhere. I have to use a/ c to stop my iPhone overheating but it says gulf of mexico and that was what I wanted. That and it loads on the homescreen.

I suppose someone could get the source code from https://github.com/osmandapp/OsmAnd-iOS and compile the app themselves, but I don't think Apple allows dev mode CarPlay on production devices like that.
F-Droid on iOS?
I will second OsmAnd. You need to use the paid version from the app store to use CarPlay, but personally I really like it, and use it regularly.
Offline maps are important to me, and it'll happily route me even when there is no signal.
The only downside is, it's only as detailed as OSM (which in all honesty, is often better than gmaps. Plus you can easily contribute things that are missing)
ยฃ10/y or ยฃ40/perpetual for the version that activates CarPlay (and gives you regular offline map downloads, as the free version only gives you 8 before you have to either pay or side load).
And honestly, I'm not that mad that it's chargeable. They make a good free product based on OSM, I don't mind chipping them a tenner.
OsmAnd is Dutch and open source. The lifetime pro version is a little expensive (hosting maps isn't free, as much as data collection companies would like you to believe that) and the open source version doesn't have Android Auto because it doesn't include Google stuff, but it's not a bad option to consider. I don't know about the status of open source on the iOS version, I think you need to compile that yourself as there isn't really an alternative app store for iOS like F-Droid is on Android.
I believe Sygic is also European (Slovak I think?). They're not open source but they have much more flexible navigation apps, with a bit more of a polish than thee open source apps I know.
TomTom has an app and I'm pretty sure they're still Dutch as well. I haven't tried theirs, but their maps are the basis for many commercial map providers so I'm sure their app must be fine.
