I actually asked the question of a couple of potential business collaborators, since web-based mail services are going to actively save email and chat for AI training purposes and has an abysmal track record for security, and the business deals with federally mandated protected classes of information. You can also use LibreOffice instead of Microsoft Office and Linux as a replacement for Windows. And Qwen/Deepseek/Mistral instead of ChatGPT and Session/Telegram/Threema as a replacement for Google Messages too.

Tails is for live boot but there's distros similar like Knoppix and particularly Parrot Security
