Always work in pairs. And I also recommend having three cameras per person, pointed at your pair.
Personally I prefer one bodycam (gopro on chest or helmet), one cell phone (ideally live streaming to some private cloud so they can't delete it), and one waterproof camcorder with optical zoom.
That's six cameras total, with two distinct angles. Per pair.

Personally I never go to protests with sim cards. It's a trade off.
You could also probably setup a private PeerTube instance and live stream to that
