About ten years ago there was an interesting documentary series on ARTE about this. One of the issues they mentioned is that big companies like Walmart basically own the entire food industry and they push small farmers and farm shops out of the market, and the US citizens are forced to consume processed foods, as they are the only options left, so a lot of frozen pizza etc, while fresh produce and fruits are simply no longer attractive to grow or ship; they are too expensive.

Also I’ll add that poor people have less time in a day vs. Middle or rich one. So it’s easier to buy processed ready to make food
