This has amazing macros, best snack possible. Powdered pb is almost half protein, other half being mostly fiber complex or carbs, remaining ~10% unextracted oils. Very very healthy. Lots of potassium and iron.

Ingredients: (to taste)

  • powdered peanut butter (no sugar preferable, plenty in sriracha)

  • chicken breasts

  • celery

  • black pepper

  • white pepper

  • cilantro

  • chili peppers (i'd use serrano?)

  • onion

  • chili powders you like (optional)

  • garlic

  • green onion

  • lime

  • sriracha (get the actual thai stuff)

  • fish sauce

  • light soy sauce

Instructions:

  • mix sriracha, light soy, fish sauce, and lime juice with powdered peanut butter

  • mince onions, cilantro, garlic, green onions, and chili with salt to make a paste, add to peanut sauce. better if you let it sit

  • saute your chicken or use baked, boiled, leftover from carcass used to make stock whatever

  • chop up celery, add sauce to it, top with chicken. you can also do this by mixing the onions, cilantro, and green onions with the chicken instead of saucifying them but I prefer this way for flavor. for presentation the latter would be better, but people will sideye this anyways

Disclaimer: wife hates this even though it is the best thing in the world. The cool celery and the pungent sauce interact well, and if you actually have chicken that isn't flavorless (I doubt it), it's gourmet stuff. You're welcome.
