Once I knew the encounters in each game well enough and felt comfortable with their particular mechanics for parrying with different equipment, etc. I was able to challenge myself and seeing what I can get away with.

Most satisfying of all my parries is parrying the first attack from Pontiff Sulyvahn. It's just so tasty when it happens lol.

I've done a few runs w a focus on parry, but it is not my preferred approach.

The one I enjoyed most was dual scimitars.
