That would be too obvious. πŸ˜‚. I wonder, how light is your roast? You mention them being a light roast, and extracting at a lower temperature. Maybe the original taste was even lighter than what you have currently?

My boss brought me Smith & Dorlas coffee, tried that for the first time. I like a bit of a lighter roast, but in all fairness they're pretty decent πŸ‘Œ

Hm I have exactly the opposite, more of a cold brew kind of person. But both can coexist pretty decently!
