I'm still kind of an anime/manga noob even though I've been watching and reading since I was a tween.

i assume you're already aware of most of these, but they aren't on your watched list

for gundam that you seem to have not watched: ibo and turn a are both fantastic, the two best in the franchise imo
millennium actress is one of the best movies of all time, rip satoshi kon
ghost in the shell stand alone complex is a great show that really lives up to the movie
votoms is a classic 80s mecha anime with some great stuff. the post series ovas are especially great
patlabor is great, the first movie is just one of the best techno thrillers ever made
dallos is the first ova ever and also by mamoru oshii, it's a sci-fi spin on the battle of algiers about a colonial miners rebellion
showa genroku rakugo shinju is just a fantastic quiet drama about a closeted gay man coming of age in the art scene of post-war japan

i have more i could rec but these the are ones i feel like you'd be most into. if you want more lmk

the single best show of all time imo. has an understanding of power structures and dynamics that makes it truly stand out as a masterpiece

lotta content warnings, the big ones are below but if there's anything you're worried about ask and i'll let you know if its there. if you like evangelion you can almost certainly handle it, but it's worth mentioning

the big content warnings

incest, child sexual abuse, grooming, gaslighting, the violent enforcement of the patriarchy (including misogyny, gender roles, homophobia, etc)

also i added a few other recs to the og post, to keep things more contained
