I'd say it's hated the same way people hate on Sword Art Online. Or if you're are a programmer, the same way people hate on Java.
There are anime that people watch, and anime that people hate.
Oh wow is it all of UC or just the original 1979 anime? Personally, for the UC timeline, I have watched only the 1979 anime so far 😅
Assuming you have completed only the 1979 anime, the logical next step is to continue with the rest of UC. Otherwise, there are so many options when it comes to the AUs.
Without knowing anything about your taste, I can only tell you about my top 3 Gundams:

But really, the AUs are mostly (all? I haven't watch everything) great, and I can only assume even the worst Gundams are just mid. So it's hard to go wrong with anything you pick.
@Endmaker I've seen others, I just wanted to rewatch the first one.
so far I have seen the original, zeta, chars countterattack, the first hathaway movie, the first thunderbolt movie, witch from mercury, gqux, some of origin/wing/00, and a little bit of zz, but I didn't like that one. and I've also watched some of the SD series like brave battle warriors and gundam world.
So I've seen a lot but there's still so much more...
Have you seen Gundam Build Fighters? I thought it would be some sort of soulless ad thing (don't worry, they have those too), but it ended up being one of the most charming things I've ever seen.
IBO is also very good, and Mobile Fighter G Gundam has the most fun mobile suit designs.
@Unboxious I haven't seen any of those yet. One of my problems with SD Gundam World was the product placement. Like I know Bandai wants to sell toys and there's nothing inherently wrong with that, but I don't want the show to feel like it's full of ads.

Exactly the concern I had. Build Fighters itself doesn't feel like that at all. Maybe it helps that you barely ever actually see any details of the characters working on their kits, or perhaps it's that their kits are all so thoroughly customized that they're often unrecognizable when compared to the original kit anyways (not that that stopped Bandai from selling kits for those customized versions, but I digress). Maybe it's just that I was having too much fun watching it to notice. Anyways, it felt to me more like a love-letter to the entire Gundam franchise than an ad for gunpla. The sequels (Build Fighters Try, Build Divers, Build Divers Re:Rise) I'm far less fond of; besides being poorly written there absolutely were times where it felt some of them were trying to push things like the card game that I just wasn't interested in.
G Gundam is weird. It certainly has its comedic moments but it doesn't feel like that's what it's usually aiming for. It feels more like a saturday morning cartoon. It's incredibly corny good fun, though sometimes it can get serious. Unlike Build Fighters it also has a good dub that a lot of people are very fond of, so if you watch this show you may want to try both audio tracks.
If Bandai makes a Nether Gundam kit I'm buying on day one.
