Are the icons at the top customizable from the standpoint of having fewer of them. Like, rather than change icon, can you just remove the wifi from the top if you want?

Yes, Plasma lets you customize which icons show on the system tray. If you want you can push them all to the overflow menu or not have a system tray at all.

Yes you can, in fact not many people know this in Plasma you can place any icon trays to any order you want
