Cookie Monster would be Fezzik, the castle gate scene would be hilarious with him in a dark robe:

“Me Dread Pirate Roberts! There will be no survivors! Me men here! Me here! But soon, you will not be here! [on fire] Dread Pirate Roberts takes no survivors! All your worst nightmares about to come true! Dread Pirate Roberts here for cookies, and your souls!”
