Vegonzola melts real good. But it's a blue so not ideal for everything. I stick it on pizza
Closest I've come to that is black bean paste. As in the Chinese variety. It's all salt and umami, so it works as a half hearted replacement. But yeah, that's the best I can personally offer.
tapioca starch + plant milk + melty fat (margarine or coconut oil) + some miso and nutr yeast, blend together. makes a cheesy goop that forms a melted cheese like texture after cooking
