The meme format requires the last two panels to be the same. Gru looking back at it adds a reaction to things not going as planned. Editing the last panel removes this crucial context.

Memes are supposed to be mutated, combined, and subverted or they are not interesting. A "format" has, on its own, no comedic value and no message. When it comes to memes, changing the format is the format.
