If you want something that cooks and bakes like eggs there's stuff you can by like Just Egg

For baking there's a million things you can use that are pretty cheap. For instance, Aquafaba is the leftover water from cooking chickpeas or the water in the can if you buy it canned. Acts like egg whites and can be used as a binder for baking

Ken Martin is no perfect angel, but he'll make progress a lot easier than the previous chair. He helped elected reps who got a fairly progressive agenda through in Minnesota with a one seat majority

Paid family leave, free breakfast & lunch for students, free community college for families making <80k, guaranteed paid sick leave, banned companies from holding mandatory anti-union meetings, etc.

The good news is that some progress has been made in the US. The semi-recent (2022) FDA modernization act 2.0 removes mandates for animal testing in law and allows other testing methods to be used instead

There's another bill (FDA modernization act 3.0) that was just reintroduced a few days ago to not just allow the FDA to use non-animal testing, but to require that the FDA start actually working to allow it and setup pathways, rules, requirements, etc. And prioritize the review of drugs done via approved non-animal testing

It includes various reporting, safety, etc. requirements laid out so it wouldn't just be handing it blindly to the current admin

The 2.0 act was suprisingly bipartisan, so it's not a given that the 3.0 act would be doomed. Call your house representative and senators to make sure it gets through!

Probably helps that Dems yesterday in an Iowa special just flipped a state senate district. That district voted for Trump by a 21% margin in 2024. A dem just won it by ~3-4%

There also was an overperformed by 14 points in a Minnesota special election (getting 90% of the vote) yesterday too

His horrible actions have fired people up

If you're looking for a scramble, things like tofu scrambles can be pretty good! Usually that's with firm tofu rather than soft tofu, but you absolutely can use soft tofu as well. It can also be seasoned a million different ways. Here's one example recipe (with firm tofu)

Soft tofu will have a different texture than firm so you can try recipes for both and see what you think. (EDIT: Note that you generally don't want to substitute one for the other because of that texture difference so look for recipes that specifically call for using firm tofu or specifically call for soft/silken)


Soft/silken tofu can also be used as a binder too and replace dairy / eggs in various recipes. Like I've made a chocolate mousse with it before and it didn't affect the taste. Had some friends and family try it and they both didn't know there was tofu in it and also were surprised to learn it was vegan
