Dice it up real small with carrots and onion. Saute gently in butter. Now you have mirepoix, a delicious base for many foods. The flavor needs to be concentrated. Try celery salt as well to really taste the delicious flavor.

See also iceberg lettuce, water chestnuts, jicama, kohlrabi, and broccoli stems for differing water:crunch ratios.

Watermelon can be crunchy.

Coconuts too if you eat the whole shell.
