I managed to eat for lunch mayonnaise that has been expired for 3 years. Obviously, I chose death. The Koraat after some more stropping is not too bad - maybe it will smooth out further.

I don't know of anyone else who has had difficulty with a Koraat 14-2.0. Ulrik's steel is very hard and almost impervious to stropping except to remove burr. Are you having issues with Ulrik's edge?

2021 was a great mayo vintage, to be fair.

It has probably been produced hre-COVID
