Depends on what you print. If you want to print ABS/ASA, you'll always be making compromises, but maybe with a Voron you'll make fewer.
The comparison with commercial printers is kinda pointless, it's like asking a car enthusiast why they're tuning their car for the racetrack when they can buy one pre made, it's because they want to build one.
If you decide to build one, maybe check out the doomcube discord, lots of interesting concepts there, from tiny printers to huge ones.
