One issue I've hit when de-googling is some sites/services/orgs/etc won't let me change my email. So I'm stuck with google as long as I use those sites/services/orgs.
Can't you opt you have forgot password or forgot email, then when it goes to validate you chose I don't have access to this account?
I've changed some email this way
I have purchases linked to the accounts and they can't be migrated to new accounts. Ie humble bundles, tutorials and educational materials. It sucks that there are services out there that are designed without the ability to change emails.
Well, tbh, they just use an email as a username a lot of times. As long as you note the old email address and password for an acct you should be good. Another option: Forward those emails with keys and other important info to a new address, or better yet, archive those all to a .PST (if you have Outlook for example) so they're available offline.
Last but not least, stop using that old email, switch all important stuff over and leave the old dormant. I DO recommend a strong password update and possible MFA since you'll seldom access it. But then you can disregard the old account and it exist for historical purposes.
With some, deleting and recreating accounts may work. Some may be tricky.
The less Google usage, the less data they get, the less they understand about who you are now.
Oh have non google accounts, I just can't be 100% free of them
