As a a died in the wool Lithuanian through band through it gave me a warm feeling seeing this on Lemmy as the Lithuanian subs are not yet populated so this has been a glaring hole in my feed.
For anyone interested there is a winter version simply called ‘Barščiai’ which is also amazing.

Also big in Poland. The winter version is called “chłodnik litewski” — literally “lithuanian cooler”. And yeah it’s basically cold borszcz.
Ukraine too! My Ukrainian grandfather made it.
I was going to say, that looks like a crazy borszcz.
Konsume cool beet root soup in summer, enjoy side of potat. Awake in gulag, potat is lie, such is lyfe.
