the OG Journey to the West show from the 80s is unironically great of you like classic fantasy with costumes and practical effects like the old japanese/italian/russian movies that MST3K riffed on. pretty sure the whole series is on youtube. if you flip through chinese channels on your tv you'll probably find an episode airing on the CCTV channel or other

the other type of show that you'll always see is some historic civil war/anti-japanese war/wwII drama of which there are maybe 500 different shows. not sure which ones are good since i've only seen an episode here or there

the tencent Three-body problem show from a couple of years ago is pretty good (improves on the book by having characters with more personality for example, and is less misogynist) but it's really long, 30 episodes of around an hour each

Depends on what you're into: drama? romance? wuxia? xianxia? historical? contemporary?

Chinese television has a lot of really great things to watch. Moonlight Mystique as Vampire recommended is great xianxia. If you want historical fiction, Lightseeker: The Story of Young Mao Zedong is pretty interesting, Mao is kind of a twink lol.
